It’s my 3rd time at Hervé Dining Room & won’t be my last.
To summarize:
- The dishes are amazing & unique that you can’t find elsewhere. Not only beautifully presented, their taste is just originally delicious. You might prefer some dishes than others but it’s hard to dislike any of them.
- The dining room is chic & private, no more than 20 guests per dinner. The open kitchen is like a stage where Hervé & his team perform their culinary show. But no smell at all.
- Ther service is excellent, caring with a smile.
- Last but not least, chef Hervé is so creative & passionate that you can feel his love in every dish he made.
It’s just one of a kind fine dining experience that any gourmet shoud try in his/her life.

There were eleven of us at the Chef s Table for the 19 course degustation menu! We were on a Vietnam food tour so we all had very good food as an important aspect of our travels. This menu contained too many courses and took 3.5 hours to get through - too long. Certainly each dish was beautifully executed but too many. A few us us chose the wine paring option at $100 AUS per person - not worth it. The dining room and views of the open kitchen were all fabulous, great atmosphere as was the service. Chef Herve was there initially to talk through the first few courses but then he was not to be seen again - disappointing considering our group bought him about $3,500 worth of business for the night: there were only 4 other people there! For me it was a bit "overdone" - maybe a smaller menu would have changed my view. PS I do speak on behalf of others on our tour.
