Tuna eyes, a must-try delicacy when coming to Phu Yen

Translated by Bing
Ocean tuna eyes or "Ocean Headlights" are a unique specialty of Phu Yen waters – which is likened to the "capital of ocean tuna" because fishermen in Phu Cau coastal village (Tuy Hoa) were the first to develop this type of fish fishing since 1994.

Initially, when making fish, people often ignored it. But seeing that the tuna eyes were too big, it was a waste of money, so the locals found a way to process it, and finally made a dish with a unique taste that cannot be found anywhere else.

Looking at the "appearance" of this dish, many people are certainly afraid to taste it, but, when you have tried the tuna eye, you will definitely remember it forever.

The tuna eye is very large, but people only take the bridge of the eye to eat it and can be processed into many quite diverse dishes such as boiling water, cooking soup, etc. But the most famous is the tuna eye dish with the potential to be very nutritious.

The most difficult thing in processing is the deodorization. Fresh tuna eyes are blanched in boiling salt water, then washed, remove blood veins and then steamed with pandan leaves, lemongrass, and ginger to absorb the aroma and reduce the fishy smell. After being washed, the tuna eyes will be put into a bowl with herbs, spices, onions, garlic, peppers, etc. to help the dish taste better and increase the flavor.

When cooked, it is not fishy but fragrant and fatty, very palatable and delicious. In Phu Yen, ocean tuna eyes are considered a snack, so they are rarely used with white rice but served with green cabbage, crispy hot baked rice cakes and a cup of spicy soy sauce.

Tuna eyes have high nutritional value because they are rich in omega 3 and DHA, which are good for the eyes and brain. Nowadays, coming to Phu Yen, from 5-star luxury restaurants to small roadside stalls, you can find ocean tuna eyes. However, because the number of tuna caught here is not too much, only enough to serve the needs of local people, it is difficult to find this specialty in other provinces and cities. That is the reason why ocean tuna eyes in Phu Yen are increasingly famous and sought by many tourists to enjoy.
