Located at the corner of Hang Chieu and Dao Duy Tu streets, opposite O Quan Cuong, Hoan Kiem district, Hung Thinh porridge is famous and long-standing in Hanoi. In the rainy season in the last months of the year, the restaurant is always crowded with customers who come to eat on the spot or buy home.
The owner of the restaurant, Bui Thi Nga, 45 years old, is the main kitchen. She followed in her mother's footsteps, nearly 70 years old this year. The shop started selling in the early 1990s, before that, my grandfather and then my mother used to sell it to neighbors and colleagues," Ms. Nga said. House No. 1 Hang Chieu is inherited from the life of Mr. and Mrs. Nga.
The rooster is a mollusk, the body is about 6-7 cm long, with many vertebrae, the sides are fluffy, red, blue or gray. This species lives in sandy soil in brackish waters, bordering the estuaries of the Northern provinces. For many generations, farmers have called orangutans "lucky heavens" because from the mud, they suddenly come out and bring back tens of millions of VND per season. Orangutans after processing are considered one of the specialty dishes.
There are two seasons, usually in the harvest (March to June) and the crop (August to December). Orangutans are taken from Hai Duong, Nghe An, and caught directly at the lagoon. Depending on the weather conditions, every time the rice is floating, the shop will come to the collection place. If it is not in season, the orangutans will be frozen and sold all year round.
The rice is cleaned, mixed with ingredients such as minced pork, onions, dill, tangerine peels and eggs and fried in a hot fat pan. This is the traditional recipe of the old Hanoi people, the restaurant has not changed since the time of his grandfather, nor is it confused with any region. Stinky tangerines are a special indispensable ingredient of pork rolls, with essential oils to help detoxify, fight cold, and reduce the fishy smell of pork belly.
Rice rolls are processed on-site, with many different types, depending on the amount of rice rolls. The rice for diners at the restaurant will be fried crispy golden, but not too old to still retain its juicy and fragrant taste. The rice brought back has been fried, guests only need to put it in the air fryer or fry it again.
Diners can order special pork rolls priced from 170,000 VND to 220,000 VND per serving. Especially small pork rolls, priced at 75,000 VND per serving and regular pork rolls at 45,000 VND per serving. Each serving of pork rolls comes with vermicelli, raw vegetables and pickles.
Hung Thinh pork rolls are open from 7 am to 9 pm every day, only 3 days off for Tet. Due to the narrow floor of the old town, the shop only has 2 tables sitting on the sidewalk right at the main entrance. On the 3rd floor, the restaurant has more room for about 20 people.
At noon, from 11 a.m. to 1:30 p.m. is the busiest time. Summer visitors are halved compared to winter. Visitors come and go in and out, from young people to the elderly, Southern visitors and foreigners. Ms. Nga fried without resting her hands.
In addition to spring rolls, the shop also sells crab spring rolls, shrimp spring rolls, surface spring rolls and spring rolls priced at 12,000 VND each (crab spring rolls alone are 18,000 VND). Unprocessed orangutans cost from 300,000 VND to 600,000 VND per kg.
Hung Thinh porridge is located in the center of the old town, so it is quite cramped. Motorbikes must be close to the gate of Wu Quan Chuong and only a few can be left. Diners by car must park along the embankment road, about 500 meters away, or use public transportation.
