Don Tra Khuc
This is a specialty of Quang Ngai, appearing a lot in two large rivers, Tra Khuc and Ve River. Usually in the dry season around April-May, people around the river go to rake dons. Don lives buried in the sand, so raking is quite hard.
Don after buying or catching it is washed, put in boiling water, stirred vigorously and constantly to open the mouth, so that the broth is juicy. Put the pot down, take the clear water, put it in another pot and season to taste. Don treat the intestines. When customers order, the vendor scoops up some don and breaks a rice paper into a bowl, adds onions, green onions and cilantro, then fills it with water. Don served with chili, garlic, pepper.... It can be enjoyed at any time of the day, but Quang Ngai people usually eat it in the afternoon.

Tra river goby
Quang Ngai people often eat goby at their daily meals and consider goby as an indispensable dish in life. Tra river goby is best in summer. Fishermen often catch fish with a drum pipe (bamboo pipe about 1 m long, drum at both ends, a sharp stake inserted into the water). The goby is brought back fresh, put in a pot of soil for chili and onion spices, pepper the water invades, then rim with a simmering fire along with onion spices, chili, garlic, add a little pepper and water for more than an hour. The fish is both chewy and fragrant and salty to eat with white rice.
Along with don, Tra River goby is in the top 50 best dishes in Vietnam recognized by the Vietnam Record Book Center.

Panties
Unlike Southern pancakes, pancakes in Quang Ngai are molded in small molds, about 20 cm in diameter. The crust is made from fresh rice flour, the finished cake is usually soft, with shrimp filling, bean sprouts... Corn Ram
Glutinous corn (corn) or shredded American corn, mixed with salt, sugar, pepper, chives, and then wrapped in rice paper, a thin and chewy cake.
