Machida Shoten Ramen is a Yokohama-style ramen, which is a harmonious combination of the Tonkotsu style in the West (Kyushu) and the Shoyo style in the East (Tokyo). The combination of chicken and pork has created a rich soup and gives the ramen bowl its own unique character. The toppings include spinach and chashu meat, a large piece of dried seaweed served with large, golden and straight noodles.
The unique feature of Machida Shoten Ramen is the "Kanmaku style" ceremony. "Kanmaku" means to use up the soup, which is called "kanzen ni soup wo makuru" in Japanese.
