In line with Hyatt's philosophy of 'Carefully Selected, Carefully Served Food', Chef Arnaud and Chef Trung Hau have combined their deep appreciation for the richness of nature to create this menu as a true expression of their culinary art. The two masters take advantage of the best seasonal produce from local farmers, compiling their favorite techniques to create a menu of two or three dishes that changes weekly. Throughout each week, the lunch menu showcases a wide range of exquisite French delicacies. With an illustrious career spanning 22 years spanning continents and countless awards, Chef Arnaud brings to diners a wealth of Michelin-starred expertise. Diners can enjoy classic French dishes such as tender chicken breast with "Pomme Anna" and grilled chicken sauce, exquisite Parisian-style gnocchi for vegetarians, or Salmon Gravad Lax elegantly presented with watercress and toast. On the other side of this intercultural dialogue, Chef Trung Hau invites gourmets to join a journey to discover Vietnam's rich culinary traditions from a contemporary perspective. As a key figure in Square One's kitchen for the past five years, Chef Hau is truly an artisan who processes Vietnamese flavors. His approach combines a deep understanding of the five elements of taste with inspiration from long trips across the country.
