"Mr Bay of the West" pancake was honored by Michelin in Hanoi

The pancake shop "Mr Bay Mien Tay" in Hanoi was added to the Bib Gourmand 2024 list by the Michelin Guide for the first time - a title for restaurants with good quality food at affordable prices on June 20.

The restaurant was opened by Mr. Le Trong Quoc, or Mr. Bay, for 10 years on Hang Dieu Street. The restaurant space has two floors, accommodating about 50 guests at the same time. The owner wants customers to come to eat not only to feel the food but also to enjoy the space with Western quality. Therefore, at each table, he spreads a Southern bandana.



Banh xeo is the most ordered dish by diners, priced from 95,000 VND to 140,000 VND, including a selection of vegetarian pancakes, Southern pancakes, beef pancakes, chicken pancakes and seafood pancakes. Mr. Quoc said that the most obvious difference of Western pancakes is the larger size than many pancakes in other regions.


In the West, pancakes have many types of fillings, from fish and shrimp to chicken, duck, mussels or even termites. Western people also have the habit of eating vegetables outside the garden, almost all vegetables are put in and eaten with pancakes. However, because the ingredients cannot be imported into Hanoi and to suit the general taste, the shop only sells some types of pancakes as above, served with lettuce, perilla, and marjoram.

The pancakes are poured on a large, deep pan. Before pouring the cake, the pan is coated with oil and then poured with flour, adding an even layer of omelette so that the oil does not soak into the filling and cause nausea. A poured pancake is about 30 cm wide, crispy, fragrant with coconut milk, has a beautiful yellow color, and does not burn due to overheating. The dipping sauce is sweet and sour, suitable for the taste of the majority of diners.



After processing, the cake is placed on a mat, lined with banana leaves and cut into about 5-6 pieces for easy rolling.


Besides pancakes, the shop also sells many other Southern dishes such as vermicelli, spring rolls, and goby fish hotpot. Typical coconut and shrimp salad in the West. In addition to fish, shrimp, and beef that are easy to buy in Hanoi, some ingredients such as vegetables, crazy cotton, cotton chopsticks, and coconut root are imported from the South to ensure the right taste.
